CLASSIC 50
STILL COLUMN – 50% A/C
The unique character of Chamarel 50 begins with the quality of the sugar cane harvested at the Domaine at the end of the season.
Characterized by its exceptional aromas and warm finish, this Rhum Pur Canne is distilled in a Barbet copper column still and slowly reduced to 50% over a period of 6 months.
CLASSIC 40
STILL COLUMN – 40% A/C
The Chamarel 40 is a unique blend of 2 varieties of sugar cane harvested at the Domaine.
Distillation is done in a Barbet copper column still at 70% pure alcohol. The Rum is then slowly mixed, reduced to 40% and blended to achieve the perfect balance.
DOUBLE DISTILLED
SMALL PRIMER BATCH – 44% A/C
Rare and Unique, this Rum is distilled in small copper stills, using the same method as in Cognac.
The contact with the copper and the gentle heat allow the Master Distiller to cut only the Heart of the Rum, which guarantees a rich, fruity and extremely sweet Rum.
GOLD & SPICED rums

GOLD
This Pure Cane rum is distilled in a column still and refined for 18 months in an oak barrel (5,600 litres).
A well-balanced rum, very fresh and fruity, with subtle notes of spices and vanilla. Ideal for cocktails.
SPICED RUM
This Spiced Rum is a double maturation of Gold Rum first, it is then infused with Natural Vanilla in Oak barrels for a minimum of 3 months.
A well-balanced rum, unique in its process and ideal for cocktails or simply for sipping.
EXOTIC SPICES
This Spiced Rum is a double maturation of Gold Rum first, it is then infused with Natural Spices in Oak barrels for a minimum of 3 months.

AGED RUMS

AGES 3-4 YEARS – 40% A/C
This Pure Cane Rum is distilled in a column still and aged 3 to 4 years in American Oak Barrels in our Cellar. We use a part of new barrels with many types of taste to ensure the best balance of aromas.
A unique, elegant and rich vanilla Rum with a mellow finish.
VSOP
AGES 4-6 – 41% A/C
This Pure Cane Rum is partly distilled in a column still and in a pot still (10%). Each Rum is aged separately for 4 to 6 years in American Oak Barrels & French Oak Barrels in our cellar.
Complex aromas of spices, with a warm and long finish
XO
AGES 6-8 – 43% A/C

Cask Finish Extra Old Rums

WHISKY TOURBE
8 YEARS OLD – 45% A/C
After 6 years of maturation in our Cellar, the Chamarel XO underwent a double maturation in ex Peated Whiskey 200Lts freshly imported barrels, for another 2 years.
"Peated whiskey has a smoky flavor from compounds released by peat fires used to dry barley malt."
The combination guarantees a delicious taste and delivers an extraordinary spicy smoke and lingering finish.
MOSCATEL
8 YEARS OLD – 45% A/C
After 6 years of maturation in our Cellar, the Chamarel XO was double aged in ex Moscatel casks for another 24 months. Moscatel grapes are very limited in the sherry region. The fermentation is stopped by the fortification very soon which guarantees a naturally sweet wine.
It is characterized by a lot of floral aromas (orange blossom, jasmine…) and a specific fruitiness, with a honeyed touch and raisin mouthfeel.
The combination guarantees a delicious taste and delivers an extraordinary spicy smoke and lingering finish.
OLOROSO
8 YEARS OLD – 45% A/C
After 6 years of maturation in our Cellar, the Chamarel XO underwent a double maturation in ex Oloroso barrels (500Lts) for another 2 years.
“Oloroso is a wine made from palomino grapes. The alcohol is added at 17% therefore preventing the development of flower veil and allowing the wine to age when exposed to oxygen”.
Ranging from rich amber to deep mahogany in color, the longer the wine the longer it has been aged. Warm and round aromas that are both complex and powerful.
The combination guarantees a rum complex, rich in flavor and intense finish.
Extra Old Rums
FROM PURE AND UNIQUE SUGARCANE
This limited edition rum is truly the best of the Chamarel Collection. The sugar cane is harvested from the best plantation of the Domaine and double distillation in Pot Still. Only the Heart will be aged in three different barrels; two French oak barrels dated 2014 and a French Oak Cask dated 2012 at the Domaine. The reduction is very slow over the last 2 years.
Intense and complex, with warm spices, vanilla, dried fruits, caramel, toffee and nuts.
